As I entered the doors of the Fairmont Princess , all my senses were captured by its beautiful decor, the sunset, the music and the warm and friendly smile of the most stylish hospitality staff in Arizona.I felt a sense of comfort like I was in my casa.
I was invited to dine at the award winning The Hacienda by Chef Richard Sandoval.What began in his abuelitas kitchen has propelled in to an award winning career with many culinary creations all with a core of traditional Mexican cuisine and a dash of Chef Sandoval’s magical creativity.

I was greeted with a view of 200 of the most superb Tequila bottles and the lovely Tequila Goddess suggested I start with a very tasty and visually beautiful Prickly Pear Margarita a blend of tres agave tequila, prickly pear, fresh sour. As I savored it, my table side freshly made guacamole was being prepared with fresh avocado, tomato, onion, chile serrano and cilantro is a great opening act for what is to come.
My next entree, a trio of Lobster Tacos prepared with flour tortillas, refined beans, arbol chile, avocado and fresh lobster were an explosion of deliciousness one you can not miss out savoring in Chef Sandoval’s menu.
And when you thought it simply could not get better it does with a Filet a la Parilla – grilled beef tenderloin, Oaxaca cheese and chile pasilla gastrique will take your taste buds to a culinary journey through Northern Mexico.
For a sweet finally La Haciendas “Signature” Coconut Tres Leches Vanilla Cake, centered with coconut flan ( Yes, that’s right Flan) and fresh berries was a fusion of the magic of Chef Sandoval signature creativity the fusion of the old and new flavors of Mexico’s cuisine.
While my sweet tooth was in awe of my Tres Leches Cake my visual senses were being delighted by the creation of my Flaming Hot Coffee a mixture of fire, a dash of sugar, tequila, liqueur and freshly made whip cream sprinkled with chocolate shavings is simply a blend of Chef Sandoval’s magical realism to combine the supernatural with the ordinary which I’m pretty sure was the essence of his Abuelitas aromatic kitchen.
