For Valentine’s Day dinner (served from 5-9 p.m. on Feb. 13 and 14), surrounded by wall-to-wall windows that showcase the breathtaking sunset over Mummy Mountain, guests can savor elements’ four-course, prix-fixe menu by Executive Chef Beau MacMillan. Priced at $149 per person plus tax and gratuity, dinner begins with a chef’s amuse of Whipped Brie Crostini with balsamic roasted strawberries, toasted walnut and micro celery. Standout dishes will include Thai Spiced Lobster & Coconut Soup with purple basil, ginger and lobster dumpling; Beet Raviolo with ricotta, honey cured beets, charred Romanesco, preserved lemon and pistachio emulsion; Barolo Braised Short Rib with candied root vegetables, porcini sugo, parmesan polenta, and two wash ranch fried egg; and Pineapple Green Curry with farmer’s market vegetables, sticky rice fritters, green onion and toasted cashews.
